Budget Meals for Life on the Road
If you followed along on our lap of Australia you will know that we love to cook meals that are cheap, easy and healthy.
In our latest vlog we shared what a typical day of van life meals looks like for us and will share the recipes from that video here!
5 Ingredient/5 Minute Pasta
Ingredients
1 x Punnet of cherry tomatoes (250g)
2 x Medium (185g) cans of tuna in olive oil
1 x Tub of cherry bocconcini (220g)
1 x Packet of your choice of pasta
2 x Tbsps tomato paste
A few handfuls of spinach
Add your pasta to a pot of boiling salted water and cook as per packet instructions.
Fry the cherry tomatoes on a medium heat in some oil from the tuna until they begin to break apart.
Before draining the pasta take about a 1/4 cup of the pasta cooking water and add to the tomatoes.
Add the tuna, bocconcini, tomato paste & pasta and stir until the cheese melts & thickens the sauce. Just before serving add the spinach to wilt slightly.
Makes 4 small serves.
Pancakes
Ingredients
1 x Ripe banana
2 x Eggs
1 x Egg white
1/2 Cup of oats
1 Tsp of baking powder
1/3 Cup of chickpeas
1 x Scoop of protein powder (we use vanilla flavoured)
1 Tsp of ground cinnamon
Coconut oil
Your choice of fruit/nuts/yoghurt to serve
Blend all ingredients together in a blender.
Heat some coconut oil in a pan over a low-medium heat. Mix makes 2 large/3 small pancakes.
We usually serve with mixed fruit, coconut yoghurt, walnuts, honey & an extra sprinkle of cinnamon on top.
Burrito Bowls
Ingredients
Olive oil
1 x Large zucchini
2 x Medium carrots
1 x Can of black beans
1 x Can of red kidney beans
1 x Packet of Mexican spice mix
140g Tomato paste (small tub or a few spoonfuls)
1 x Small tinned corn (125g)
Basmati rice
Tomato & cucumber to serve
Grate the carrot and zucchini & drain tins.
Cook your desired amount of rice as per packet instructions and heat oil in a large pot over a medium heat.
Add carrot & zucchini to the pot first & remaining ingredients once they have softened.
Cook over a low heat for about 10 minutes, stirring occasionally.
Serve burrito mix on top of your rice and top with fresh diced tomato & cucumber.
Makes 4 serves.
